Ed's Tomato & Gorgonzola Tart

A pairing for our Terre di Marca organic Pinot Grigio. Recipe credit @eddmifflin

This easygoing, summery tomato tart solves the problem of your tomato glut and pairs deliciously with our crisp and zingy organic Pinot Grigio.

Ingredients (serves 4)

  • 1 sheetready rolled puff pastry
  • 1egg, whisked
  • handfulfresh tomatoes, thinly sliced
  • dollopcream cheese
  • few dotsgorgonzola
  • small handfulfresh basil


Score puff pastry sheet around the edge to create a border. Prick with a fork in the middle. Brush the edges with egg and bake for 10-15 mins.

Out of the oven, spread cream cheese over the middle of the pastry. Top with thinly sliced tomatoes and season. Pop back in the oven for 15 mins.

Remove from the oven and dot some Gorgonzola over the tomatoes. Return to the oven for a final minute or two until the cheese has melted.

Add a scattering of basil and serve with a cold glass of Pinot Grigio.
